SUSHI
Marcin Konkiel
One of the most respected and decorated sushi experts in Poland. Owner and sushi chef of the Gdynia restaurant Umiko Sushi, where he passionately shares the secrets of Japanese cuisine. Laureate of the Japanese Cuisine and Food Culture Human Resource Development Program, organized by JDCD. He gained experience during an internship at the prestigious restaurant KikunoiHonten in Kyoto, which specializes in traditional kaiseki dishes and was awarded three Michelin stars. His knowledge and craftsmanship inspire exploration of the flavors and traditions of Japanese cuisine.
MARTIAL ARTS
Matsumoto Group
During the 5th edition of the Japanese Weekend at Klekotki Mill we will host the Matsumoto Group - a team of enthusiasts of historical Japanese weaponry and traditional Japanese culture. Their presence is a unique opportunity to encounter the authentic art of the sword, its history, philosophy and aesthetics. The program of meetings with the Matsumoto Group includes:
- an exhibition of historical Japanese weaponry,
- a presentation of authentic Japanese swords, including unique specimens dating back to the 14th century,
- talks about the sword-making process, their symbolism and significance in Japanese culture,
- a sword art demonstration,
- a demonstration of putting on traditional Japanese armor,
- short introductory workshops on the basics of sword handling,
- the opportunity for those interested to try kendo training.
A meeting with Matsumoto is one of the most unique parts of the Japanese Weekend - an experience that allows you to touch the living tradition of Japan and view the martial art as a form of genuine discipline and harmony.
mizuhiki
Nanako Kern
Nanako Kern is from Osaka and is passionate about traditional Japanese crafts. She especially enjoys classes that combine tradition with everyday life – creating utilitarian objects, ornaments and small accessories in the spirit of Japanese aesthetics. She is fascinated by the material, the process, and how objects with a unique character can be made from simple raw materials.
One of her favorite areas is mizuhiki – the traditional technique of tying paper cords, from which ornaments, jewelry and elements used on special occasions are created. In Japan, mizuhiki is associated with good wishes and hospitality. It is a craft that teaches patience, precision and attention to detail.
During the workshops Nanako introduces participants to a world of colors, knots and simple forms. She shows, step by step, how to create your own small items – from jewelry to small decorations – and how to gain satisfaction and calm from handcrafting. The classes will be conducted in English.
STREET FOOD
Przemysław Milanowski
Experienced chef and enthusiast of Asian street food. For 10 years he has been exploring the culinary traditions of Asia, traveling through its most fascinating regions and uncovering the secrets of local recipes and cooking techniques. In his restaurants YattaRamen, BBQ RAMENYA and Jeju Korea he brings the flavors of Japan and Korea closer to Poles. His specialties are ramen, Korean dishes and street food, which fully capture the spirit of Asian cuisine.
JAPANESE GREEN TEA
Marta Skorupska
Lover of green tea and Japanese cuisine, traveler and author of the blog mochiko.pl and the book "Ramen. My Journey. My Taste". In Kyoto she completed the Tea Master Course run by the Global Japanese Tea Association and has traveled across Japan many times in search of interesting brews and extraordinary plantations. She conducts tastings and workshops, revealing to participants the rich world of Japanese teas and their traditions and rituals.
IKEBANA
Anka Powązka
An Ikkyu master of the Sogetsu School of Ikebana and a promoter of the Japanese art of flower arranging. She leads signature workshops where participants learn not only the rules of composition but, above all, the philosophy and aesthetics behind ikebana. Her works and outreach activities inspire the practice of mindfulness and the discovery of harmony and beauty in everyday life.
SAKE
Adrian Nowakowski
Sake ambassador and a connoisseur of Japanese culinary culture. A passionate enthusiast who presents the diversity and richness of Japanese beverages, explaining their traditional production and significance in Japanese culture. Co-owner Tsunade Sake Company, he leads tastings during which participants can discover the subtleties and complexity of this noble drink.
ACUPUNCTURE
Łukasz Cierocki
Masseur, manual therapist and acupuncturist. Student of Hiroshi Yamamoto Sensei. Founder of Sakura Med – a clinic specializing in Japanese acupuncture. Privately, a fan of Japanese cuisine and Far Eastern philosophy. Promoter of Japanese Medical Arts.
SLOW JOGGING
Uwe Schwarz
Uwe Schwarz is a slow jogging instructor, a sports physician and an orthopedist. For years he has been involved in sports medicine and shows how to exercise wisely at any age. He focuses on healthy movement patterns, injury prevention and tailoring training to individual abilities. For many years he has also been interested in Japan, to which he regularly returns for inspiration related to health, movement and longevity.
During his sessions he shows how much joy and benefit slow jogging can bring. This gentle and light form of running was developed by Hiroaki Tanaka, a Japanese professor of sports science. Slow jogging strengthens the body, improves fitness and is accessible to everyone – regardless of age or sporting experience. The classes will be conducted in English.
